Larder Challenge

On Wednesday we completed ‘The Larder Challenge.’ Our aim was to create high skill and complex dishes which include accompaniments such as creme anglaise, ice cream, hollandaise sauce or mayonnaise. 

The challenge meant that we could only use ingredients in our larder, fridge or freezer at home on that day. Most of us made two or slightly more portions so that we could choose and serve the best to be marked. I personally found this challenge exciting as it allowed me to think out of the box to create a visually appealing dish which includes accompaniments, with limited ingredients. The only tricky part which occurred to us all was that we needed to complete it in our lesson, which many of us struggled with. Showing that we need to increase our speed as well as our skills!

Some dishes that were made included pear tart with ice cream, meringue nests with frozen fruit, apple and blackberry cinnamon tart with cinnamon ice cream, chocolate mousse with raspberry coulis and biscuits and so many more.
