This week in Food and Nutrition Mrs Mair challenged us to create a complex dish of hand made ravioli and sauce. She gave us the recipe for pasta and encouraged us to seek out our own recipe for the filling and sauce. It was really exciting! I decided to make one half of my pasta plain and add herbs to the other half for more flavour. Amira made her pasta with basil, which was delicious with garlic and butter. Vidya made her filling with crab, while Sunny added truffle salt to her sauce. I love cheese, so decided to make a triple cheese filling with basil and it was certainly a treat. I used shop bought mozzarella and ricotta this time, but we made mozzarella last term and Mrs Mair explained how to make our own ricotta from milk and lemon juice, which sounded delicious. Next time I will make my own cheese to use as the filling.


I learned about the ideal thickness for ravioli and was surprised at how quickly fresh pasta takes to cook. I will take my new knowledge into Upper V next year, confident that I can make a complex dish in under an hour. I loved the session, it was really interesting and I enjoyed the challenge of cooking a complex dish which tasted delicious!
