On Tuesday, we were at school bright and early at 6:00 and left on the coach at 6:30. We arrived in London at Borough Market at about 9:30 and had the whole market to ourselves while the sellers were setting up. We went into the bakery course room at 10:30 and had a course in French bread. We were given the dough which they had made for us already and we split it into half for a baguette and a traditional fougasse. We were told the fougasse was made from the leftover dough from baguettes to test the temperature of the oven before you could have temperature-controlled ovens. To form the baguettes we folded the two opposite long sides of the dough into the middle and then folded it in half on itself. And we made sure to seal the seam (where the dough met) well each time. We then left them to prove in a prover and when we took them out we scored them with a razor before we put them into the oven. We then moved onto the fougasse. Where we stretched it out so it was a circle a bit like a pizza base but smaller. We then cut holes in it. Everyone’s fougasse were different but people mostly put a hole down the middle and then 3 slanted on each side next to the long middle hole.

After all our creations were in the oven they gave us their famous brownies which were delicious. The room smelt incredible and then before we knew it the bread was out of the oven. After trying some bread which they had made before we had come we went down to the ‘Wild Mushroom Risotto’ stall. Everyone got a mushroom risotto from the stall and enjoyed it for lunch. We then had a few hours to go around the market with our friends. We loved the wonderful stalls at the market, finding different foods and unusual things to look at. We bought fudge, donuts, chocolate covered strawberries, fruit, cheese and even more. It was a really enjoyable day and everyone had lots of fun making bread and walking around the market.
