On Friday we had a special delivery of fresh trout, straight from the lake, fished that day and supplied by Felix Farm Trout Fishery in local Binfield. It was great to learn about trout with such a fresh catch, especially from a local British supplier.


We enjoyed learning about filleting and making fish cakes from these delicious fresh fish. We contrasted the size, appearance, colour and muscle tone of the lake trout compared to one farmed and bought from Waitrose. The pale colour of the flesh in the lake trout meant that the fish had not eaten any artificial coloured food as fed to intensively farmed trout, only what it had caught in the lake.

Once cooked, we compared the flavours and the clear winner was the lake trout, in every category, the most noticeable being the muscle tone and the flavour of the Felix Fishery trout – it was delicious!

We made fish cakes to take home to our families who really enjoyed the flavour and a tasty meal on Friday.
